About the Coffee:
Ki-Saya means “tasty nature” in the local Mayan language, a fitting name for this organic lot from the highlands of Chiapas. Grown by smallholder farmers, many of whom are Tzotzil and Tzeltal, this coffee reflects a long tradition of cultivation rooted in community and care. Decaffeinated using the Mountain Water Process with spring water from Pico de Orizaba, it retains all its character while offering a clean, chemical-free cup with depth and sweetness.

We ship our freshly roasted coffee twice a week, on Tuesdays and Fridays, to get our beans to you as quickly as possible.

Yes, we can grind your coffee for filter brewing only. Please specify your brewing method in the checkout notes for an appropriate grind. However, due to the uniqueness of home setups, we can’t guarantee the grind will be perfect for all machines and recommend grinding just before brewing if possible.
We do not offer pre-ground coffee for espresso due to the precise nature of espresso brewing. For the best results, we recommend grinding espresso beans at home with a suitable grinder.
To maintain the freshness of your coffee beans, store them in a dark and cool place. Our bags are equipped with a zipper for easy resealing, which helps to preserve their freshness. Another excellent option is to use a vacuum container, which you can find here.
